Fabulous Recipe Pick!


Last night I made yummy stuffed Chicken Breasts for myself and hubby for the first time and it was delicious and also very healthy.  Below is the recipe with suggestions of substitutions.

3 Pds. of Chicken Breast Skinned
1 tablespoon Season Salt
1 tablespoon Paprika (not necessary, was used to add color as I was out of Sazon)
1 tablespoon Parsley
1 tablespoon garlic out of the jar (love the juices) or fresh garlic
1 cup Brocolli or Vegetable of your choice
1/2 cup Mushrooms
1/2 cup Parmesan Cheese or chesse of your choice

Instructions:

On a cutting board remove skin and any additional fat from Chicken Breasts.  Wash chicken off, poke a few tiny wholes in each so seasoning goes through and then slice each chicken on the side slicing half way through making a pocket.  Make sure slice is open enough for you to stuff ingredients.  Take an oven pan of your choice and line with aluminum foil and place sliced chicken breasts in pan.  Begin to season chicken breasts on each side with season salt, parprika and parsley.  Once seasoned, stuff chicken with brocolli, mushrooms and parmesan cheese.  The amount of ingredients you want to stuff in each chicken breast is up to you.  Once done stuffing fold top half of chicken breast over the stuffing and make sure stuffing is in tight enough so nothing falls out.  Lastly, sprinkle tops of chicken breasts with garlic.  Place aluminum foil tightly over pan and place in the oven at 350 degrees.  Cook for 40-45 minutes or until your liking.  In the middle of cooking you may want to drizzle light butter on each breast just to add extra juices to your chicken.
