Fabulous Recipe Pick!


Yummy! I made this below recipe yesterday evening and hit the spot perfectly.  Not to heavy but just right, serve with a side of salad and you're good to go.  Check out the recipe below.

Chicken Chili

Ingredients:

2 tablespoons Olive Oil
1 Onion, chopped (you may also substitute with 2-3 tablespoons onion powder)
1 tablespoon fresh Garlic
1 1/2 (14 ounce) cans Chicken Broth
2 (15.5 ounce) cans Red Kidney Beans
1 pd sliced boneless chicken torn into bite-size pieces
3 tablespoons ground cumin (optional, I made it without as I didn't have any)
2 tablespoons chili powder
1 tablespoon crushed red pepper (more or less depending on how spicy you like it
1 (8 ounce) container sour cream (optional)
1 (8 ounce) package shredded cheddar cheese to sprinkle on top

Directions:

Place two tablespoons of olive oil in pan and place on medium heat.  Place onions in the pan and let cook for about 3 minutes until translucent.  If using onion powder place in pan with olive oil followed by garlic.  Saute for 30 seconds and then pour in chicken broth, beans and chicken.  Season with cumin, chili powder and red pepper.  Let food come to a boil (10 minutes or so) and then place fire on low heat to simmer (10 minutes.)

Serve with cheddar cheese  and sour cream on top.
